A traditional bourbon varietal somewhat mellow and light in the cup, processed by the traditional dry or “natural” method.

This area is designated “Dry” because it has a rainy season lasting only three months averaging between 9.2 and 10.0 inches. The coffee is grown at an elevation of 3,000 feet. The temperature ranges from 60 to 77 degrees Fahrenheit, making for mild, tropical summers and dry winters.

The growing cycle on the estate is as follows: in September the trees flower, from October through December expansion of the berries occurs, January though March dry matter development occurs with unripened berries appearing on the trees in April, in the months of May though June cherries continue to ripen. The harvesting takes place in July and August.

The Traditional Dry method (versus the “Natural Dry”) dries for approximately four days on the patios and is then finished in mechanical dryers for 18 to 24 hours.
